Our client is a privately owned manufacturer of baked goods. The company has been in operation for more than 25 years and employs over 500 people.

Responsibilities
1) Bridge the new product roll-out process between R&D and Operations
2) Work with R&D and Operations to validate scale up of bench top recipes to large batches
3) Ensure documentation includes batch sheets, specifications and nutritional labels
4) Provide expertise and knowledge in the area of food labeling regulations
5) Oversee reviewing and approval of corporate brand labels for nutritional claims and regulatory labeling requirements
6) Maintain the electronic product specification and recipe files
7) Develop the nutritional label for all new products after they have been assigned an item number
8) Maintain accurate and up-to-date electronic files of all-nutritional data and ingredient label data for all products
9) Maintain files of all ingredient, packaging and finished good specification and develop new ones
10) Keep updates with regulatory and technological changes that may affect labeling laws for the food industry
11) Maintain professional contacts with peers in industry, trade associations and government agencies
12) Provide leadership and be the main labeling technical resource for Corporate Bakery and Manufacturing staff as it relates to nutritional and regulatory labeling of consumer packages
13) Demonstrate excellence in project planning, execution and timing through project evaluation and use of resources available to shorten the time for the label approval process
14) Support the rollout of new products by working closely with R&D to monitor and adjust mixing and baking times of new products
15) Maintain a master list of baking profiles used at the bakery and ensure specifications reflect the correct profiles
16) Support the QA Department with shelf-life studies on product utilizing analytical change in the product as well as sensory changes
17) Determine the optimum shelf life of bakery items
18) Evaluate different types of packaging to achieve maximum cost savings while providing adequate protection for the product
19) Support the QA Department with evaluation of product vs. specification weights based on production weight data and on actual measurement to make the specifications accurately reflect the production
20) Develop all the technical documentation required to produce the product on the shop floor
21) Work with the Production Department to make the specifications sheets user-friendly

Requirements
1) Bachelor’s degree in Food Science, Packaging Science or a related field
2) 5+ years of experience in the food industry and in consumer packaging (label compliance)
3) Extensive experience in bakery and desserts preferred
4) Good interaction skills with cross-functional groups
5) Strong leadership and computer skills
6) Attention to detail
